It’s the simple things. A meal plan ready for the week ahead and an early bedtime. Name a better Sunday. I’ll wait... But not past 8:30 😂 This week’s meal plan is up on my website, ready to make our week a little easier. 🫶🏼 Find all of these recipes on my website as always, or comment MEAL PLAN and I will send you the link to all of these!

Easy Beginner’s Focaccia Bread. I used to think making bread was an unnecessary use of my weekend. Now I’m rearranging plans around a bowl of dough. 😆 No kneading, no mixer and very little hands-on time. Even if you’ve never made bread before, you can make this. You just need to plan ahead. I've served with roasted garlic dipping oil, stracciatella and mortadella – it makes an incredible appetiser. Find the recipe on my website, as always. 🫶🏼

Tuna Fish Cakes Who would have thought tuna fish cakes would have me this excited. 😂 Tuna, potato, corn, spring onion and cheese, crispy parmesan-panko crumbs and a sweet chilli lime sauce that I could happily put on everything. The potato cooks in the microwave, the fish cakes bake in the oven and they’re just as good cold the next day. From my new cookbook, Simple Weeknights, page 97. Tuna Avocado Crispy Rice Salad I've made this salad more than 10 times and I'm still not over it! 😂 Canned tuna is one of my favourite affordable pantry staples, and this is such a delicious way to turn it into dinner. Crispy rice, creamy avocado, crunchy veggies and the most incredible sesame-soy dressing. I wasn't sure the extra step of baking the rice would be worth it, but it absolutely is! And if you're feeding kids who aren't interested in crispy rice, you can just use plain rice instead.
