what works for someone else may not work for you. there’s a lot of factors that can effect the outcome when baking, but that’s the fun of experimenting. there’s so many different methods that can be used to achieve the same results. stretch and folds, coil folds, slap and folds, general kneading, etc., can all give u similar results but it’s about learning what works for you based on the temp and humidity where you live and what type of dough you’re working with. it’s all a matter of preference
