I've never made crab apple jam before, and when I looked at recipes, I noticed they used SO much sugar. I didn't want to add as much sugar as the recipes called for, so I made my own lower-sugar version using chia seeds to thicken it. And because there isn't enough sugar for this to be a shelf-stable jam, I freeze it in small jars.
