Dinner today is a roasted vegetable medley of broccoli, sunchokes, and celeriac with those Daring layered soy protein pieces. Top tier summer weeknight meal.
I finally got around to trying sunchokes (peeled and roasted), and wow they taste so much like artichoke hearts, so I see why they've been called Jerusalem artichokes. Very delicious.
